Cod fritters, or accras, are small donuts prepared from cod, and are a favourite around the holiday season.
Black cake is the fruitcake of the Caribbean. Essentially, it’s a mix of English Christmas pudding with Caribbean ingredients (including Caribbean rum). Some of the best Black Cake can be found in Philipsburg.

Guavaberry punch is an island favourite around the Christmastime. The guavaberry is a traditional liqueur of Saint-Martin produced from aged rum, brown sugar and wild guavaberries that grow in the hills in the centre of the island.
Helicopter tours are a thrilling way to see St Martin and it's beautiful shorelines. Tour the French side, Dutch side, BOTH sides, or even fly on over to Anguilla. Regardless which tour you select, it is sure to be a most memorable moment in your life.
Soar through the rain forest by zip line at Rainforest Adventures. As home to the World's steepest zip line, excitement is their thing. Not up for the 56 miles per hour drop? Not to worry, there are activities for all, including the serene lookout, which provides a breathtaking view of St Maarten.
Rhino Safari is a 2 ½ hour water fun-filled tour by small 10’ rubber 2-person boat, giving you a full tour of Simpson Bay Lagoon and the island from the water, including snorkelling in the Caribbean Sea.
